The planes didn't knock them over like dominoes. The fuel from the planes was sufficient to weaken the structures to the point where the weight of the building above was more than the structure could hold, therefore the building collapsed at these points. After that it was all a matter of momentum, each floor couldn't possibly take the force of all of the above floors falling on it, so therefore they pancaked.

 

Edit: To clarify, the verticle collapse was because by far the most significant force acting on the buildings at the time of the collapse was gravity.

 

Edit: Also to me personally the reason why the Holocaust was probably the worst crime in the history of humanity was because of how and why it was done. It wasn't to secure power or to win a war, it was simply for the purpose of wiping out a race. On top of that it was done in such a machine like fashion, there is something far more horrifying to me about killing with such efficiency.
