Nokia has an app for Windows and Mac that allows users to sync their devices with iTunes flawlessly. While the interface is different than if you have an ipod (drag and drop), it still works very well. In options you can choose to sync either certain playlists or your even your entire library. Upon connecting your phone, you can have it sync automatically with those playlists, meaning it adds/deletes music, podcasts, and even encodes video for your specific phone according to your preferences without any user input.

You can also have it sync directly with iphoto. Similar to the third party app I used with my Sony w800, except that it's a much better program.

There are ways to do it without upsetting apple, like famousringo said.
