I'd say Mario is lawful good. Of course, we have no grasp on the laws of the mushroom kingdom. He seems almost obliviously good, like there's no real malice there, he's just doing things.
Kirby is the same way, i think. He can't do evil, but it's not like he's really striving for anything.
