Yeah, Detroit Become Human really stood out for me as well. It managed to produce an illusion of an actual AI that would greet me and say different things every time I booted up. And the change that happened in Chloe over time as you progressed in the game, very nice.
And TLOU as well, the peaceful and very low key title screen with the music and the curtains gently moving in the wind conveys heaps of atmosphere, even when you don't really know what you're getting into yet.

Xenoblade Chronicles 2 changing title screen as you go through the chapters was a nice dynamic touch. Xenoblade X had a pretty awesome too with probably the best title screen theme of them all !

Otherwise, FFX, Mario & Luigi: Dream Team, Star Fox 64 have some really cool ones too ^^

Pretty much none because they're the most useless thing. Or course they can look neat/have something special going on, but even then, I don't think I remember any that stand out. Well, I guess there's Metal Gear Solid 2 and Final Fantasy XV (if it actually had a title screen instead of just a menu), which change their title screens after completing the game, but it's not that special either.

Paper Mario: The Thousand-Year-Door
Super Mario Galaxy
Batman: Arkham Asylum
Stardew Valley

Most of these blow me away not because of FMVs, gameplay, etc. but largely their logo design and music.
